Big Batch Chai Overnight Oats with Poached Pears
Most of us are busy in the morning or on the go, leaving little time to make a real, healthy breakfast. Overnight oats, or soaking oats in some type of liquid overnight, only takes five minutes to assemble at night. Plus, I have scaled the recipe up to last you for days without having to do any additional prep throughout the week. The combination of the warming chai spices, the tang of the yogurt and the subtle sweetness of the maple syrup means you’ve got yourself a hearty and comforting meal to eat first thing in the morning.

Yield: 4-6 servings
Ingredients
2 cups of gluten-free rolled oats
⅓ cup ground flax seed
1/4 cup chia seeds
1½ tsp vanilla extract
3 cups of unsweetened almond milk
1 cup plus 1 tbsp of 2% Greek yogurt
2 tbsp maple syrup
1½ tsp ground cinnamon
½ tsp ground cardamom
1 tsp ground cloves
¼ tsp ground coriander
½ tsp ground ginger
1 bosch pear, peeled and cubed
Directions
In a microwave safe bowl, microwave the pears for 2 minutes, stir, and then microwave for another 2 minutes. Let cool, then store in an airtight container.
Combine all of the ingredients in a large bowl until well incorporated. Transfer the overnight oats to a large airtight container. Refrigerate overnight or for at least 5 hours.
In the morning, top with the poached pear and a drizzle of maple syrup.
Notes: The mixture will keep for up to 4 days.
