Sunflower Seed Pluot Truffles

With these easy to make and filling treats, everyone, including my nut-free folks, can indulge themselves throughout the day when your energy gets low and you need a little pick me up. Plus, using a seasonal fruit like Pluots makes these the official truffles of July.

Ingredients

¼ cup unsweetened sunflower spread

1 cup gluten free rolled oats

¾ tsp salt

10 dried pluots (I bought them from nuts.com)

⅓ cup ground flax seeds

¼ tsp ground coriander

⅛ tsp nutmeg

1 tsp vanilla extract

2 tbsp agave

⅓ cup roasted salted sunflower seeds

 

Directions

  1. Place the sunflower seeds in a gallon zip lock bag and use the back of a measuring cup to roughly smash the seeds. Place the smashed seeds in a small plate and set aside.

  2. In a food processor, combine all of the ingredients and process the mixture until sticky and homogenized.

  3. Roll into balls about 1” in diameter.

  4. Roll and coat each ball in the smashed sunflower seeds. Refrigerate for up to 5 days, or serve immediately.
