Whole Grain Buttermilk Waffles

One way to make the morning on a weekend a little more special is by making a batch of waffles. Specifically, this batch of waffles. Say hello to brunch in the comfort of your own home. Plus, these waffles won’t slow you down for whatever energy packed weekend you might have. I also recommend making two batches for leftovers the next morning, or even as dessert!

Total time: 20 minutes Yield: 5-6 servings

Ingredients

1 cup oat flour

3/4 cup whole wheat flour

2 cups of buttermilk

1/2 tsp salt

2 tsp baking soda

1 tsp cinnamon

1/2 tsp vanilla extract

2 eggs

1 tbsp unsalted butter, melted

Directions

  1. In a medium bowl, whisk together the wet ingredients.

  2. In a large bowl, whisk together the dry ingredients.

  3. Combine the wet ingredients into the dry ingredients. Do not over mix.

  4. Coat the waffle machine with cooking spray. Once the machine is hot, use a ¼ cup to pour the batter onto the waffle machine. Cook for 1-2 minutes, then flip.

  5. Serve with fresh berries and a sprinkle of cinnamon.
