Black Bean Brownies
Did someone say flourless, gluten-free brownies!? You heard that right. These brownies are not only ready in a flash but they are also a great alternative for my gluten-free folks. Not to mention they are perfectly decadent. Plus, you likely already have a can of black beans sitting in your pantry so why not put them to a different, sweeter use.
Total Time: 30 minutes
Yield: 12 brownies
Ingredients
1 can black beans, drained
3 eggs
½ cup Enjoy Life! 69% chocolate chips
2 tbsp honey
½ cup dark cocoa powder
1 tsp baking powder
1 tsp baking soda
1 tbsp vanilla extract
3 tbsp vegetable oil
¼ tsp salt
Directions
Preheat the oven to 350F.
Coat an 8x8 glass baking dish with cooking spray, or coat with butter.
In a food processor, purée the black beans until smooth, scraping the sides when necessary. Add in the rest of the ingredients except for the chocolate chip.
Once everything is well combined and the mixture is smooth, use a rubber spatula to scrape the mixture into a medium bowl. Add in the chocolate chips and mix.
Spread the mixture evenly into the baking dish. Top with additional chocolate chips if desired.
Bake for 20 minutes.
Let cool for 10 minutes. Serve!
