Healthy Ginger Molasses Cookies

Want to get in the holiday spirit? Make these better-for-you ginger molasses cookies for you and your guests (okay, maybe just for you). Either way, enjoy these chewy gluten-free, low-sugar cookies this winter.

Ingredients

2 cups of almond flour

¼ cup of tapioca flour

2 tbsp of flax seeds

1 tsp of baking soda

1 tsp baking powder

1 large egg

¼ cup molasses

1 tsp of ground cinnamon

2 tsp of ground ginger

½ tsp ground cardamom

½ tsp of salt

¼ cup of coconut oil

¼ cup coconut sugar

Directions

  1. Preheat the oven to 350°F.

  2. Combine all of the ingredients in a medium bowl and use a rubber spatula to mix together.

  3. On a baking sheet lined with parchment paper. Form the cookies into balls with your hands. (Optional: Sprinkle each cookie with granulated organic cane sugar).

  4. Bake for about 10 minutes. Let cool.
