No Bake Dark Chocolate Fig Nut Bars

I wanted to make a dessert that was quick, easy and still reminiscent of traditional Italian ingredients like figs and almonds. These ultra rich and decadent dessert bars hit the spot after dinner, so get ready to lick your fingers and give these nutty crumbs a “swipe right”.

Total time: 20 minutes

Yield: 9 bars

Ingredients

1 cup of unsalted raw hazelnuts, toasted

½ cup unsalted raw almonds, toasted

1/2 tsp kosher salt

2 cups of gluten-free rolled oats

½ cup dried mission figs (about 20 small mission figs)

3 tbsp olive oil

¼ cup agave

¼ cup almond butter

6oz 85% dark chocolate, roughly chopped

Directions

  1. Line a 8x8” glass or metal baking dish with parchment paper. Set aside.

  2. In a small microwave safe bowl, melt the chocolate using 30 second intervals, stirring in between each interval. Set aside.

  3. Combine all of the ingredients except the chocolate in a food processor. Process until the mixture is finely ground.

  4. Press about 1/2 of the mixture into the baking dish (I recommend using the back of a measuring cup to flatten out the mixture). Freeze for 10 minutes.

  5. Remove the baking dish from the freezer and evenly pour in the melted chocolate and then add the rest of the fig nut mixture on top. Freeze for 30 minutes. Slice the bars into squares and serve immediately, or keep frozen.
