Chicken Lettuce Wraps

I don’t doubt that you’ve heard of or tried Chicken Lettuce Wraps out to dinner in the past, but have you made them yourself before? Now you can. This spicy and tangy, low-carb dish is great for meal prepping for the week because it’s easy to make in large batches and it’s hard to get sick of. Try it out for dinner tonight.

Total Time: 35 minutes

Prep Time: 15 minutes

Cook Time: 10 minutes

Yield: 4-6 Servings

Ingredients

1 head of Boston Bibb lettuce

1 pound of ground chicken

1 red bell pepper, diced

1 medium yellow onion, diced

1 bunch of scallions, sliced (reserve 2 scallions for garnish)

3 tbsp of low sodium soy sauce

2.5 tbsp of Sambal

4 cloves of garlic, finely chopped

1.5 tbsp sesame oil

3/4 cup of hoison sauce

3 tbsp of rice wine vinegar

1 tbsp of freshly grated ginger

2 tbsp of lime juice

1 tbsp honey

1/2 cup chopped salted peanuts (reserve 2 tbsp for garnish)

Toasted sesame seeds for garnish 

Directions

  1. Heat the sesame oil in a large skillet over medium-high heat. Place the red bell pepper, scallions, and onion in the pan and sauté for 5-7 minutes, until softened. Add the garlic and cook for 2-3 minutes.

  2. Add in the soy sauce, rice wine vinegar, hoison sauce, sambal, lime juice and fresh ginger to the pan. Cook for another 3-5 minutes. 

  3. Add in the ground chicken and coat the chicken with the mixture. Cook until no longer pink. Season to taste.

  4. Stir in the chopped peanuts and cook for 2 more minutes.

  5. Place the mixture on a large platter and garnish the toasted sesame seeds, scallions and peanuts. Serve the mixture in the Bibb lettuce leaves.
