Feta Dip

Most times when I have company over, I’m happy to cook up a storm. But there are also times when I either don’t have the time to cook, or I’m simply not in the mood. I may not want to cook, but I certainly want to impress my guests. Ready in under 10 minutes, this recipe is my go-to crowd pleaser. It’s simple and filling, and goes well with your favorite seedy cracker.

Total time: 10 minutes

Yield: About 3 cups (serves 16)

Ingredients

1 lb block of feta, cubed

1/2 tsp salt

1/2 tsp pepper

2 cloves of garlic, minced

1 cup of 2% Greek Yogurt

2.5 tbsp of extra virgin olive oil



Directions

  1. In a food processor, combine the ingredients. Process until relatively smooth, scraping the sides as needed. Process again, and season to taste.

  2. Using a rubber spatula, scrape the dip into your desired serving bowl. The dip can be made 1 day in advance, and keeps for about four days. Pair with whole grain or seeded crackers, or whole wheat pretzels.
