No-Bake Chocolate Oat Bars

I’m always trying to create recipes that can be eaten at any point of the day because it makes the effort more worth while. In this case, these Chocolate Oat Bars are great for breakfast, as a snack or for dessert. Give them a whirl!

Total time: 30 minutes

Active time: 20 minutes

Yield: 28 bars

Ingredients

1 cup of creamy peanut butter (I use Trader Joe’s salted creamy peanut butter)

3 ounces of dark chocolate (at least 70% or over), coarsely chopped

1/4 cup of olive oil

1/4 cup of honey

1 tsp of vanilla extract

3 cups of rolled oats

1/4 cup of chopped cherries

1 tsp of kosher salt

Directions

  1. Line a 9x13-inch baking dish with parchment paper. Coat the paper with cooking spray. Set aside.

  2. In a medium sized microwave safe bowl, melt the peanut butter, dark chocolate, olive oil and honey in the microwave using 30 second intervals until smooth.

  3. Mix the dry ingredients in a large bowl.

  4. Using a spatula, pour and scrape the wet ingredients into the dry ingredients. Mix well.

  5. Transfer the mixture to the baking dish and press the mixture into an even layer. Freeze for 40 minutes.

  6. Lift the mixture out of the baking dish using the parchment paper, and cut the mixture into squares.

  7. Serve!

Storage: Refrigerate the bars in an airtight container for 1-2 weeks.
