Dark Chocolate Peanut Butter Cups

When I dream about sweets and dessert (which happens pretty much 24/7), this is what comes to mind. Instead of milk chocolate, I use dark chocolate and I use creamy peanut butter OR Wild Friends’ Chocolate Coconut Peanut Butter to make them extra chocolatey and delicious.

A healthier spin on a beloved classic candy, here is my recipe for Dark Chocolate Peanut Butter Cups!

Total time: 50 Minutes

Active time: 20 minutes

Yield: 16 Peanut Butter Cups

Ingredients

8 ounces of dark chocolate (must be at least 70% or higher), coarsely chopped

1/4 cup of creamy peanut butter (I use Trader Joe’s salted creamy peanut butter), or Wild Friends’ Chocolate Coconut Peanut Butter

Directions

  1. Use a small muffin tin to line sixteen cup using muffins papers/liners.

  2. In a small microwave safe bowl, melt the dark chocolate using 30 second intervals until completely melted.

  3. Using a teaspoon, spoon the chocolate into the cup then use the backside of the teaspoon to coat the sides of the papers about half way up the liner. Repeat this step for each cup. Place in the freezer for 10 minutes.

  4. Using a half teaspoon, spoon the peanut butter into each cup. Freeze for another 10 minutes.

  5. With the rest of the melted chocolate, spoon the chocolate over the peanut butter (covering the peanut butter completely). If necessary, spoon two coats of chocolate over the peanut butter. Freeze for another 10 minutes.

  6. Serve!
