Three-Ingredient Peanut Butter Cookies
I think many would agree that there is a certain degree of nostalgia associated with a classic peanut butter cookie. Growing up, I would find them at bake sales, a birthday party and in the grocery store. It was also something I frequently made with a friend during a playdate (those were the days, huh?). The ease and excitement of imprinting the fork marks into the cookie seemed special, unlike any other cookie. Plus, when you grow up loving peanut butter, a cookie that showcases it so well it a gift. So to all of the fellow peanut butter addicts and nostalgic individuals, this recipe is for you.
Total time: 20 minutes Yield: 18 cookies
Ingredients
1/2 cup creamy or crunchy peanut butter
One egg
3 tbsp of honey
Directions
Preheat the oven to 350F. Line a baking sheet with oven-safe parchment paper or spray with Pam.
Combine the peanut butter, egg, and honey in a medium bowl. Refrigerate for 30 minutes.
Using an ice cream scooper or spoon, form balls of dough about the size of a golf ball on the baking sheet. Use a fork to press down on each cookie to create the classic peanut butter cookie look.
Bake for 10-12 minutes.
Remove the baking sheet from the oven and let the cookies cool for 10 minutes.
